Positano, a place that captivates all who have experienced its charm at least once! From its picturesque views to its tantalizing scents and flavors, everything about it is enchanting. Inspired by this idyllic destination, we dedicate our recipe of "Positano" zucchini risotto.

Crafted with thinly sliced zucchini, onions, and only natural ingredients, our "Positano" risotto is perfect as is or as a base for more elaborate dishes, whether you add your own chef's touch or follow the suggestions on the label.

PREPARATION: In a non-stick pan or pot, bring 750ml of water and 2 or more tablespoons of extra virgin olive oil to a boil. Pour the contents of the bag, cover, and cook over medium heat, stirring occasionally, until the water is almost completely absorbed, and the risotto is creamy. Add 1 ladle of boiling water for a less al dente texture. Adjust the salt, let it rest for 1 minute, and add 1 or 2 tablespoons of lukewarm water to amalgamate before serving with melted butter.

TIPS: Cook it like a classic risotto by adding water gradually. Add 6 finely chopped shrimp tails just before serving.

WINE PAIRING: Genazzano Bianco DOC or a light white wine.
