Zuppa Pugliese is a very ancient meal. It was a simple beans and legumes dish traditionally served in the past as a substituion of more expensive meat. Today it is very appreciated as a healthy and tasty (and really Italian) gourmet dish.
Preparations: soak the content of the bag overnight with a pinch of baking soda. On the following day change the water and add 2 sticks of celery, 2 tomatoes, 3 bay leaves and a clove of garlic. Cook on a low flame for at least 2 hours.
Useful tips: serve with 4 toasts seasoned with salt, grated cheese, black pepper and oil.
Wine: Cabernet Sauvignon or medium bodied red wine.
