This cous cous recipe is a very simple one as we Italians llike very much. It is perfect as a side dish or alone for a light meal or in the preparation of more elaborate recipes (try it in stuffed rice balls recipe).
Preparation : bring to a boil 1/4 cup water with two tablespoons of extra virgin oil. Just add couscous, cover the pan, turn the fire off , then rested for 5 minutes.
Useful tips: add a tbsp of Gorgonzola (Italian blue cheese) and some nuts just before serving.
Wine: Colli di Conegliano or medium bodied red wine.
